Beer Shrimp

I found this lovely recipe at the Bower Power blog after coming across them at the Young House Love. I love shrimp and thought to give this a try...DH absolutely LOVED it

Beer Shrimp

1 lb shrimp
Thyme
Garlic
Scallion
1 beer
butter
Old Bay
Cayenne Pepper
Tortellini

Chop scallion; put your shrimp in a bread pan; 20 shakes of Old Bay; 10 shakes of Cayenne pepper; throw thyme and onion on top; 1/2 T of minced garlic; pour 1/3 of the beer in; chop half a stick of butter and throw it on top; put in the oven to heat; prepare tortellini according to package.

Mexican Rice Dish

Last night I made another new dish in my repetoire...DH loved it and said it was a keeper.

It was very easy to make and didn't take that long.

Mexican Rice Dish

3-4 cubed uncooked chicken breasts
1 c Salsa
1 pkg taco seasoning
2 c water

Boil the chicken in a separate sauce pan and once done chop up into bite sized pieces
Mix the above ingredients in a large sauce pan; bring to a boil, cover and simmer for 10 mins.

1 c. white minute rice
shredded cheddar cheese

Add rice to pan
Bring to boil, cover and simmer for 5 mins

Serve as is or on a soft tortilla shell

Cantina 1511

Last night I went out to dinner with the ladies from my work. A group decided last month to have a monthly dinner outing to just relax, chat and eat. This was my first trip and it was amazing!

We had dinner at Cantina 1511 on East Blvd in Charlotte



I had wonderful Tacos Marco Polo, which were shrimp, bacon and carmelized onions stuff in flour tortillas with pico de gallo and melted Mexican cheese, instead of the red rice and beans I had the queso mashed potatoes which were to die for.

I highly recommend this restaurant!

Crispy Baked Pesto Chicken

Monday night we had this recipe and DH loved this too.

Crispy Baked Pesto Chicken

Prep Time: 10 mins Total Time: 35 mins Makes 4 Servings

4 small boneless skinless chicken breast halves (1 lb.)
1 pkt. SHAKE 'N BAKE Chicken Coating Mix
2 Tbsp. pesto
1/4 cup Shredded Mozzarella Cheese

Preheat oven to 400*F; coat chicken with coating mix; place in 8-inch square baking dish

Bake 20 min. or until chicken is cooked through (165*F)

Top chicken with pesto; sprinkle with cheese; bake an additional 5 min. or until cheese is melted and lightly browned.

I served it with green beans...but feel free to serve with whatever veggie and sides you like.

Polynesian Glazed Meatballs

I am going to start posting new recipes I have tried out on my lovely DH.

Last night we had Polynesian Glazed Meatballs and it was a HUGE success...even though DH didn't eat the onions or peppers.

Polynesian Glazed Meatballs

Prep time: 10 min. Total Time: 25 min Makes 4 servings

1 t oil
1 lg red pepper (chopped)
1 onion (chopped)
1/4 c BBQ sauce
1 tsp ground ginger
1 t garlic powder
2 cans (8 oz. each) pineapple chunks, drained, liquid reserved
12 oz. frozen cooked meatballs
2 c instant white rice, uncooked

Heat oil in large skillet on medium/high heat; add peppers and onions; cook 5 mins. or until crisp-tender, stirring frequently.
Stir in BBQ sauce, ginger, garlic powder and reserved pineapple juice; add meatballs; mix lightly until evenly coated; cook 10 min or until meatballs are heated through, stirring occasionally; cook rice as directed on package; stir pineapple into meatball mixture; serve over rice.
